I have had cheap, medium priced and expensive stainless steel, cheap, medium priced and expensive non-stick and at all price brackets stainless steel beats the non-stick. Although I have also learned that one should buy the best (which, if you look for one indicator, means the heaviest and thickest-based) cookware one can afford, unless it's only for temporary arrangement.
I have been cooking for about 15 years now, and I tried almost the whole gamut of cookware products. All have their benefits, and I wouldn't be without my cast-iron enamelled Le Creusets or silicone loaf tin. Copper pans have fantastic uses too. Overall, though, for pots and pans for the majority of cooking tasks you can't beat stainless steel (although I do keep my eyes open for hard anodised not-non-stick finishes, but these, so far, have been too expensive for the relatively small extra benefit).
Why?
1) Stainless steel will last longer. Whatever you do, if used regularly and in a normal manner, the non-stick coating will, eventually, develop scratches, and peel and crack. In fact, it's recommended to change the non-stick cookware every few years! Excuse me, but I can't afford (and in all honesty, don't want to) use a product that seems to have built-in obsolescence. If I spend 40GBP ($80) on a cooking pot, I expect it to last for many years, not to need replacing almost as soon as I get used to it.
2) Stainless steel is much more forgiving. With most non-stick surfaces, you are limited in the range of cooking tools and cleaning implements that you can use. Even the ingredients of your dish (bones and shells for example) can scratch the surface! I am busy and cook in a flurry of creative chaos (to call it nicely) and I think the effort to keep special plastic or wooden tools for the pot or pots I am using is just not worth the additional benefit. Plus, once those little scratches appear, something will stick and as you try to clean it, the surface will get damaged more, and then stick more, and so on.
3) Non stick sticks. I am yet to see a truly non-stick non-stick. It might be my personal talent for burning things, but they do, occasionally, burn, cook dry, overheat and similar. With a stainless steel cookware it can pretty much always be scraped, scrubbed and sanded off. With a non-stick surface, although it might take longer for the disaster to happen, once it's stuck, that's it: you can't resort to Brillo pads or sharp blades, you can only throw the thing away.
4) Stainless steel is more heat resistant. It can be used in the oven at all temperatures (including over 200C), and if you accidentally overheat it on the hob, it doesn't start to emit mysterious fumes, but just goes, well, very, very hot.
5) Non stick produces noxious fumes. Overheated stainless steel fumes won't give you a headache, kill your canary or cause bad reaction in your child. In fact, there won't be any fumes at all, just a very hot pan. Overheated non-stick can produce pretty noxious fumes that have been known to kill pet birds and cause people to suffer to.
6) Stainless steel doesn't chip and the chips are not a health hazard, like chips of non-stick are often considered to be.
7) Non stick is more fragile. You can stack stainless steel pans inside each other, chuck other things made of metal into them and generally store them with much less care than you have to give to non-stick.
Good stainless steel doesn't clean any worse than non-stick with a bit of a soak, and is in fact much easier to clean if anything does stick.
My favourite stainless steel cookware brand is Stellar (I like Lamina & 1000 series, but if you are sill unconvinced, they do lots of non-stick too!).

Five Subject Categories to Include in a Family History
This list is meant to help jog thinking – obviously, subject matter will vary from one family history to another.
This list is aimed at an ancestral family history, but it should be helpful for current generation family histories, too.
Category 1 – Individual Ancestors
This category is likely to be the most appreciated and viewed of all family history subjects. Associated photos (see Category 2 below) will add value.
- Writing done by an individual (e.g., my father’s early autobiography & my mother’s 47-year history)
- Any other writings – newspaper articles, obituary, etc.
- Remembrances and stories about an ancestor by descendants
- What distinguished a person as a unique individual?
- Idiosyncrasies are especially entertaining and illuminating
- Someone may have to write based on a descendant’s spoken words
- Occupational stories (e.g., a doctor ancestor made house calls using a horse)
- Other reproduced writings (e.g., 1905 letter, Agreement to join group going to California gold fields, 1851 letter from California gold fields, etc.)
Category 2 – Ancestral People Photos
Each photo is more interesting if it is dated (at least approximately), individuals are identified and some family member can write a remembrance about it (e.g., “This was the last time that these brothers and sisters were together.”)
- All the obvious – baby photos, marriage photos, photos of 3-4 generations, portraits, pets, etc.
- Photos of home, workplace, schools, vacations, holidays, family reunions, etc.
- Old cars, horses, toys, home town photos, war-related photos
- Gravestone photos – accompanied by the writings on the gravestones
Category 3 – Additional Digitized Images
In this day of digital cameras, a photo can be made of anything physical. In any family, there is a virtual treasure trove of various types of physical items. A list from the A. E. Garden family history will help with any family list.
Civil War enlistment and discharge papers. Photo of bullet taken from head of a Civil War veteran (who survived some 30 years). Indian stone axe found on ancestor’s farm. 1905-1910 birthday and greeting cards. Hand-made checkerboard. Photo of book authored by ancestor. Antique cedar chest and kitchen cabinet. Old cars – or horses. Old tools and cooking utensils. Marriage license. Tax receipts. Old maps corresponding to a time or place in a family history (many old maps can be found by Interest research).
Category 4 -- How Things Were Different “Back Then”
Older family members will respond to your general question, “How were things different back then?” A few variations to jog their memory are:
- How were Christmas and other holidays different back then?
- What are some things that no longer exist – skills, places, habits, old technology, daily routines, etc?
- Community services that no longer exist – doctor’s house calls, the 5 and 10 cent store, ice boxes, milk delivery, etc.
- Cultural differences back then – not locking doors, helping sick neighbors, importance of daily newspaper and radio, effects of a war, the depression, etc.
Category 5 – Additional Possibilities
A few items that do not fall neatly into the above categories:
- Time lines that follow important events in the life of an individual or a family (record a date and then write about the event opposite the date)
- “A Typical Day in the Life of ____________.” (Variations might include the housewife’s week of Monday washing, Tuesday ironing, Friday cleaning, Saturday baking, etc. or what the family typically did during the four seasons or did on vacations)
- Family mysteries – an example is, “Where did he get the money to go to medical school?” or “…to buy that farm?” or “Did he father an out-of-wedlock child?” – followed by speculation from older family members

Waterless Stainless Steel Cookware Or Nonstick--Which is the Better Choice?
love to cook, but it is also important to me that the meals I serve my family are both nutritious and healthy. I have always been comfortable using stainless steel saucepans but when it came to frying something on the stove, I would often resort to nonstick. Now that I've started using stainless steel cookware more extensively, I wonder why I didn't make the transition earlier.
In the late 1990s and early 2000's there were a lot of news reports showing that chemicals known as PFO's, PFOA's (perflurooctanoic acid)and PFC's were being released from the Teflon cookware into our bodies. There is evidence that this chemical has been linked to cancer in lab animals and may, in fact, have led to birth defects in DuPont employees. While DuPont, the main manufacturer and user of these chemicals, claims that these chemicals are safe, DuPont has paid out millions of dollars in compensation not only to their employees but also to the people living in the vicinity of the Parkensburg factory. Whether Teflon is completely safe to use in your home is still debatable, for even DuPont's own experts advise caution when using nonstick items, particularly at high temperatures. Studies indicate that a pan heated to 680 degree F. (which could take only minutes if a pan is left unattended to preheat) does release PFOA. Based on the growing health concerns about nonstick cookware, though it is initially cheaper to purchase, it may not be the best decision in the long run.
After researching both Teflon and stainless steel cookware, I was pleasantly surprised to learn that some of the criticisms of stainless steel cookware are unfounded. True, the initial cost of stainless cookware can be expensive, ranging in price from $300 to $2,500 for good quality stainless cookware. However, one should really consider it an investment that will last a lifetime with proper care. Stainless steel is noted for its durability and ability to resist food acids and alkaline foods as well. Steel is mixed with chromium and nickel to produce a corrosion-resistant steel that is scratch resistant and easy to clean.
The better-quality stainless steel waterless cookware is 5-ply (304 surgical stainless steel, aluminum alloy (a bonding agent for heat transfer), pure aluminum for fast and even heat distribution, aluminum alloy acting as a bonding agent for heat transfer, and surgical stainless steel) or 7-ply (304 surgical stainless steel, carbon, 304 surgical stainless steel, aluminum alloy, pure aluminum, aluminum alloy, and AISI 430 stainless steel). These layers allow for even heat flow and durability. The aluminum conducts the heat well in the inner layers. However, it would not be good on the outer layer because it would corrode and enter our food. Stainless steel effectively protects the food and cookware.
Many choose Teflon pans over stainless steel because they believe that nonstick pans are easier to clean up. However, cooking with stainless steel does not mean that foods have to stick in the pan. By using quality cookware and following simple directions, you can produce a great meal every time. Stainless steel cookware with the heavy multi-ply bottom provides an even heat that, if properly regulated, will not cause your food to stick. After preheating your pan on medium, simply put your pieces of meat or poultry in the pan, let them sear for 5 - 7 minutes on one side, then use tongs or a spatula to turn over and sear on the other side for the same time. If you try to turn your meat too early, it will stick. However, if you follow the above directions, the sticking is minimal and cleanup is easy. With stainless steel, most foods are cooked on low or medium heat. High heat is not recommended. You'll need to get to know your stove. Gas stoves allow for more heat control, but since there is so much variance among stoves, it is recommended to start out at the lower heat.
The waterless (steam-controlled) stainless steel cookware offers a whole new dimension to your cooking experience. Not only will your foods retain more flavors, but your foods will be healthier because they will retain 98% of their vitamins and minerals compared to the 58% retention rate of conventional cookware. Because foods are cooked in minimal water (the natural water contained in most foods provides enough moisture), there is minimal shrinkage. You'll definitely notice how the color, shape and taste of your food makes dining a truly pleasurable experience!
Purchasing cookware can be a major investment! Therefore, before making that decision, spend some time researching your options. Weight the pros and cons of each and then make an informed decision. You may decide that you are more comfortable using Teflon and that's fine. However, if you have had your pots and pans for a while, check their surfaces. If they have scratches or are beginning to peel off, get rid of them! There are many different types of sinks such as granite, stainless steel, porcelain, cast iron, and many more, so picking the sink that is right for you can prove to be a tough task. Stainless steel is very durable, affordable, and matches the look of most kitchens. This makes it the most common type of sink used in kitchens today.
Stainless steel is obviously a tough material (the steel thickness depends on the gauge), however they aren't scratch proof. In order to try to hide the smaller scratches as much as possible, most stainless steel sinks have a brushed finish which attempts to blend the smaller scratches in. Larger, more noticeable scratches can usually be buffed out -- make sure you follow the manufacturer's instructions while doing this to avoid any further damage to your sink.
Stainless steel sinks come in both topmount and undermount style installations. Generally if you have a formica or laminate counter-top, you'll want to use a topmount sink as with an undermount sink, water can get underneath and do damage. However if you have a solid counter-top such as marble or granite, you can go ahead and use an undermount sink.
Stainless steel sinks are a great additional to any sink. They do require some basic maintenance such as cleaning, and not being too tough with them, but it's nothing too time consuming or expensive. Stainless steel sinks are a durable, affordable, modern, and inexpensive solution to having a great looking kitchen sink.

The Pot Filler: Helpful, Innovative and Stylish

Like the kitchen faucet, a pot filler is a plumbing fixture designed to dispense water. Pot fillers, though, are designed to eliminate the trouble of carrying a pot full of water to the stovetop, prevent spillage and save your back, hands, arms and shoulders. With just a turn of a handle, water flows right to a pot on your stovetop.
A pot filler's versatility makes it more than just a luxury item. They come in two varieties (wall-mounted or deck-mounted), but one thing remains constant: it must be placed close enough to the stove top so that the folding arm can reach it.
Pot fillers are commonly made of brass, metal or stainless steel, and the handles are usually made of metal. Ceramic disc cartridges have replaced rubber washer gaskets. Considered the industry's hardest, most reliable valving material, ceramic discs reliably control water flow and are designed to last a lifetime.
Once found only in restaurant kitchens, pot fillers have migrated into the residential kitchen, bringing with them a host of brilliant and time-saving features.
- Space economy. The arm of this time-saving fixture swings out of the way when it's not being used.
- Themes. Pick a motif, and you'll find a fixture to match it.
- Handle options. They're available in your choice of one or two handles (a second control eliminates any leaks and dripping), and handle styles vary from cross to lever handles.
- Configuration. Most fixtures come with one or two faucet holes.
Unlike a standard kitchen faucet, there are no real placement guidelines, so you'll want to make sure the spout has the right height and reach.
Some kitchens are capable of hosting a pot filler, while others are not so conducive. Mounting one will take some planning, especially if you're adding to existing plumbing. Either way, you'll want to plan with a contractor.
A pot filler may not be the kitchen's most popular fixture (yet), but its popularity has grown steadily. Ingenuity and ease of operation have made it one of the most attractive features in today's kitchen.
